- 6 6 ears of corn, kernels removed
- 1 tablespoon vegetable oil
- 1/2 tablespoon minced garlic
- 2 tablespoons ricotta
- 1/4 cup green onions, reserve 1 tablespoon for garnish
- 1 jalapeno pepper, finely chopped
- 1/2 cup cilantro, reserve 1 tablespoon for garnish
- 1 lime, juice and zest
- 1/2 cup finely crumbled cotija or feta cheese
- 4 tablespoons 4 tbs chili powder, I used Chili Lime seasoning from Trader Joes
Heat a medium sized pan with vegetable oil over medium-high heat.
Add corn and cook for about 5 minutes, stirring frequently.
Drain pan of any liquid.
In a small bowl, mix ricotta, garlic, lime, & chili powder.
Add ricotta mixture to pan with remaining ingredients and stir to incorporate.
