Ingredients

  • 3 ripe avocados
  • 1 to tomato, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 jalapeño, seeds removed and finely diced
  • 1 lime, juice and zest
  • salt, to taste
  • fresh cracked black pepper, to taste
  • tortilla chips or raw vegetables for dipping

Instructions

  • Slice the avocados in half and chop the onion, jalapeño, cilantro, and tomato.
  • Using a spoon, separate the avocado flesh from the skin. Place avocados into a Molcajete and mash. Add the tomatoes, onion, cilantro and jalapeño. Mix until combined, but do not over mix.
  • Mix in the lime juice and half the zest. Add the salt and pepper and take a taste. Add more if needed.
  • Serve immediately with tortilla chips and store leftovers tightly covered in plastic wrap in the fridge.
