Ingredients

  • 1 sheet puff pastry, thawed but still cold
  • 1 tablespoon all purpose flour
  • 8 ounce brie wheel
  • 1/2 cup fig jam
  • 1 egg
  • flakey salt, to taste
  • chopped pistachios for garnish
  • 3-4 fresh figs for garnish

Instructions

  • Preheat oven to 375° F and line a baking sheet with parchment paper.
  • Sprinkle your work surface with flour. Unroll the puff pastry over the floured surface and spread about 1/4 cup of fig jam over the dough. Place the brie wheel in the center of the dough and add remaining jam to the top of the brie.
  • Gently fold the puff pastry edges up around the cheese, making sure it’s sealed all around. In a small bowl, combine the egg with 1 tsp of water. Brush the outside of the puff pastry with egg wash and sprinkle with flakey salt.
  • Bake for 25-30 minutes or until the outside is golden brown and puffed. Serve with apple slices, crackers, or add to a cheese board!
