- 1 sheet puff pastry, thawed but still cold
- 1 tablespoon all purpose flour
- 8 ounce brie wheel
- 1/2 cup fig jam
- 1 egg
- flakey salt, to taste
- chopped pistachios for garnish
- 3-4 fresh figs for garnish
Preheat oven to 375° F and line a baking sheet with parchment paper.
Sprinkle your work surface with flour. Unroll the puff pastry over the floured surface and spread about 1/4 cup of fig jam over the dough. Place the brie wheel in the center of the dough and add remaining jam to the top of the brie.
Gently fold the puff pastry edges up around the cheese, making sure it’s sealed all around. In a small bowl, combine the egg with 1 tsp of water. Brush the outside of the puff pastry with egg wash and sprinkle with flakey salt.
Bake for 25-30 minutes or until the outside is golden brown and puffed. Serve with apple slices, crackers, or add to a cheese board!
