Twice Baked Potato in Air Fryer

These Air Fryer Twice Baked Potatoes are filled with creamy mashed potatoes, cheddar cheese, broccoli, and fresh herbs. They're the perfect side dish for any meal!

Ingredients

  • 4 russet potatoes, medium in size
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 cup broccoli florets
  • 1/4 cup Greek yogurt
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh dill, chopped
  • 1/2 tablespoon garlic powder
  • fresh cracked black pepper, to taste
  • 2 tablespoons green onions or chives
  • 1 cup sharp cheddar cheese, shredded

Instructions

  • Preheat the air fryer to 400° F. Using a silicone pastry brush, brush a thin layer of olive oil all over the potatoes. Sprinkle with kosher salt.
  • Air fry the potatoes for 30-35 minutes, or until you can easily poke a fork into the center. During the last 3 minutes of cooking, add the broccolini florets to the air fryer basket. (It's ok if they overlap, they will still cook just fine!) When finished, remove the broccolini and let the potatoes sit in the warm air fryer basket with the air fryer turned off for 2-3 minutes. This will help soften the crispy skin so you don't break it when cutting open the potatoes. Don't worry, it will crisp back up when you air fry them again!
  • Dice the broccolini into small pieces, then carefully slice the potatoes in half lengthwise and scoop out the inside using a spoon (be careful not to tear the skin). *Do not discard the hollowed out potatoes*
  • Place the insides of the potatoes into a large mixing bowl with the Greek yogurt, butter, dill, garlic powder, and black pepper. Mash the potatoes using an electric mixer until smooth and creamy.
  • Fold in half the cheese and diced broccolini with a spoon or spatula. Spoon the mashed potatoes into the hollow shells. Top with remaining broccolini and cheese. Air fry at 375° for 5 minutes, or until cheese is melted and begins to turn golden brown.
