Eggplant Fries

Miso Tahini Sauce

  • 3 tablespoons tahini paste
  • 1 tablespoon white miso paste
  • 2 1/2 tablespoons light olive oil
  • 1 tablespoon honey
  • 1/4 cup hot water, can add more for a thinner consistency
  • 1/4 teaspoon chili powder

Instructions

Eggplant Fries

  • Slice the ends off of the eggplant, then slice it in half lengthwise. Slice into 1 inch thick pieces and then slice the eggplant in half horizontally to make the fries shorter.
  • In a small bowl, combine the garlic powder, paprika, cumin, salt, and sugar. Place the eggplant fries in a medium-sized mixing bowl and toss in olive oil, then season and toss to coat.
  • Preheat the air fryer to 375° F. Place the eggplant fries in the air fryer basket in a single layer (you might want to work in batches) and cook for 8-10 minutes, flipping halfway through.

Miso Tahini Sauce

  • In a small mixing bowl, mix the tahini paste, miso paste, olive oil, honey, and chili powder until fully combined. Slowly mix in the hot water until the desired consistency is reached. If you prefer a thinner consistency, you can add more hot water.

Notes

  • It's important to mix the hot water in slowly, because depending on the type of tahini you are using, the consistency might differ.
