  • Prepare the ingredients: pit and slice the peaches, cut the burrata into quarters, slice the prosciutto, and tear or chop the fresh mint and basil.
  • In a medium-sized mixing bowl, combine peaches, sugar, lemon juice, 1/4 tsp of salt, and vanilla extract.
  • Melt butter over medium heat in a heavy bottom skillet (like a cast iron). Add peaches and cook for 10 minutes, stirring occasionally until golden brown.
  • While the peaches are cooking arrange the arugula, burrata, prosciutto, basil, and mint on a large plate or platter. Season with salt and pepper and drizzle with olive oil.
  • When the peaches are finished cooking, allow them to cool and then add them to the burrata salad.
