Sweet and tangy caramelized peaches with creamy burrata, savory prosciutto, and fresh mint come together to create this beautifully bright summer salad.
Prepare the ingredients: pit and slice the peaches, cut the burrata into quarters, slice the prosciutto, and tear or chop the fresh mint and basil.
In a medium-sized mixing bowl, combine peaches, sugar, lemon juice, 1/4 tsp of salt, and vanilla extract.
Melt butter over medium heat in a heavy bottom skillet (like a cast iron). Add peaches and cook for 10 minutes, stirring occasionally until golden brown.
While the peaches are cooking arrange the arugula, burrata, prosciutto, basil, and mint on a large plate or platter. Season with salt and pepper and drizzle with olive oil.
When the peaches are finished cooking, allow them to cool and then add them to the burrata salad.
