Ingredients

  • 4 ounces thinly sliced prosciutto
  • 4 ounces goat cheese
  • 3 tablespoons whipped cream cheese
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon fresh thyme
  • 1 garlic clove
  • 1/4 teaspoon fresh ground black pepper
  • 1 lemon, zest
  • 6 plums, sliced in half and pits removed
  • balsamic glaze for drizzling, optional

Instructions

  • Preheat the oven to 400° F and arrange the prosciutto in a single layer on a foiled baking sheet. Bake for 10-12 minutes or until crispy, flipping halfway through. When finished, remove from the oven and allow to cool before finely chopping.
  • While the prosciutto is in the oven, add goat cheese, cream cheese, vanilla extract, thyme, garlic, pepper, and lemon zest to a food processor and mix on high speed for about two minutes until all ingredients are fully combined, scraping down the sides as necessary.
  • Spoon the whipped goat cheese into each plum and top with prosciutto crumbles. You can drizzle a balsamic glaze over them if you like!
