This bright and flavorful strawberry balsamic vinaigrette combines fresh strawberries, white balsamic vinegar, garlic, Dijon mustard, and honey for the perfect balance of sweet and tangy. Blended with extra virgin olive oil, it’s delicious drizzled over salads, grilled vegetables, or fresh summer greens.
Add the strawberries, olive oil, white balsamic vinegar, garlic cloves, Dijon mustard, honey, kosher salt, and black pepper to a small blender or mini food processor.
1 cup strawberries, 1/3 cup extra virgin olive oil, 1/4 cup white balsamic vinegar, 2 cloves garlic, 1 teaspoon dijon mustard, 1 teaspoon honey, 1 teaspoon kosher salt, 1/4 teaspoon ground black pepper
Blend until smooth and emulsified, adding a splash of water if you'd like a thinner, more drizzly consistency.
Taste and adjust seasoning, adding an extra pinch of salt or splash of vinegar if needed.
Notes
Strawberries: Use ripe, in-season strawberries for the best flavor. Adjust the honey depending on how sweet your berries are. Frozen strawberries work too; add a splash of water if the dressing is too thick.White balsamic: White balsamic has a lighter color and sweeter, more delicate flavor than regular balsamic. Regular balsamic can be substituted, but it will make the vinaigrette darker.Storage: Refrigerate in an airtight container for up to 1 week. Shake or stir before serving, adding a splash of water or vinegar if it thickens.Make ahead: Prepare the vinaigrette, strawberries, pickled onions, and caramelized nuts separately. Refrigerate the berries and vinaigrette, and store the nuts at room temperature. Use the berries within 1–2 days and toss the salad together just before serving.
