Dark Chocolate Brownies

  • Preheat the oven to 350° F. Grease and flour an 8 inch square baking pan.
  • In a saucepan, melt the butter. Add the dark chocolate and cocoa powder. Mix until combined and the chocolate is perfectly melted.
  • In a stand mixer, beat the eggs until they are light and fluffy. Slowly add the sugar in little by little. Before you add anything else you need to let the eggs and sugar rise and turn pale yellow in color. Stir in the vanilla extract.
  • Add some of the sugar mixture into the chocolate, so it cools off. Once it reaches room temperature, add the chocolate mixture back into the mixing bowl with the rest of the sugar and eggs. Mix until combined.
  • Sift the flour into the mixture and mix until combined. Do NOT over mix. You can also mix with a rubber spatula instead of using the stand mixer.
  • Pour into your greased pan and place in the oven for 28 to 30 minutes or until the texture does not bounce. When brownies are ready, the top will no longer look shiny. Be careful not to overcook.
  • Allow to cool for 10 minutes before removing the brownies from the pan and then cut them into squares and sift powdered sugar over top.
