How to Make Dark Chocolate Brownies
1. Prepare the baking dish. Preheat the oven to 350° F. Grease and flour an 8 inch square baking pan.
2. Mix the butter and chocolate. In a saucepan, melt the butter. Add the dark chocolate and cocoa powder. Mix until combined and the chocolate is perfectly melted.
3. Beat and eggs and sugar. In a stand mixer, beat the eggs until they are light and fluffy. Slowly add the sugar in little by little. Before you add anything else you need to let the eggs and sugar rise and turn pale yellow in color. Stir in the vanilla extract.
4. Combine the chocolate, sugar, and eggs. Add some of the sugar mixture into the chocolate, so it cools off. Once it reaches room temperature, add the chocolate mixture back into the mixing bowl with the rest of the sugar and eggs. Mix until combined.
5. Add the flour. Sift the flour into the mixture and mix until combined. Do NOT over mix. You can also mix with a rubber spatula instead of using the stand mixer.
6. Bake the brownies. Pour into your greased pan and place in the oven for 28 to 30 minutes or until the texture does not bounce. When brownies are ready, the top will no longer look shiny. Be careful not to overcook.
7. Slice the brownies. Allow to cool for 10 minutes before removing the brownies from the pan and then cut them into squares and sift powdered sugar over top.
Which Dark chocolate is best for brownies?
I find that using a dark chocolate chips or a bar is best for baking. It is easy to break, cut, shave, melt, and fold which is the best for baking.
For dark chocolate brownies I recommend using at least 60 percent cacao for the best flavor and texture.
What makes brownies fudgy vs cakey?
Fudgy brownies have a higher fat to flour ratio, meaning more butter and chocolate. Yum!
On the other hand, cakey brownies need more baking powder and more flour to help add airiness to your dessert.
What does adding an extra egg do to brownies?
Adding an egg will add volume to your brownie, making it a bit more airy. This is an easy way to get a “cakier” brownie. The taste will not change much so if you prefer a “fluffier” brownie.
Why are my brownies too gooey?
It’s very likely that your brownies are too gooey due to being underbaked. I as much as the next person love a gooey brownie, but I definitely want them to be fully cooked!
The middle of the brownie will “melt” and make for a very gooey brownie. Luckily this is a pretty easy fix, to firm up your brownie make sure you have the right temperature and pop them back in for 3 to 5 minutes.
Tip!
If you’re trying this method, make sure to keep an eye on your brownies to keep the crust from burning.
