Preheat the air fryer to 350℉.
Slice the sourdough bread into 1 inch cubes. Toss the bread with the olive oil and salt in a medium sized mixing bowl.
Place the bread in the air fryer basket. It's ok if they overlap a little, but if you end up with a big mound of cubed bread in your air fryer basket, you may want to work in batches. Air fry the croutons for 4 minutes, toss and continue air frying for 2-3 minutes, or until they are golden brown and crisp to your liking.
