Cut the apples into ⅛” inch-thick slices using a mandoline or a sharp knife.
Line the apple slices on a baking sheet. Using a pastry brush, add a thin maple syrup layer. Then, sprinkle ground cinnamon over top. Flip the apple slices and repeat the process on the other side.
Place the apple slices in the air fryer basket. Work in batches to avoid stacking the slices and cook for 10 minutes, flipping the apple chips halfway through.
Remove the apple chips from the air fryer with kitchen tongs and place them on a cooling rack for at least 5 minutes.
