Place the chicken and vegetables in a large mixing bowl. Add the olive oil to the bowl and toss to coat. Then sprinkle the cajun seasoning and salt into the bowl and toss the chicken and veggies to combine.
1 lb chicken breast, 1/2 of a red bell pepper, 1/2 of a yellow bell pepper, 1 cup green beans, 1 cup broccoli florets, 1 cup sweet potato, 2-2 tbsp olive oil, 1-2 tbsp cajun seasoning, 1 tsp kosher salt
Working in 2-3 batches, place the chicken and vegetables in the air fryer basket in a single layer if you can, they may overlap a bit and that's ok. Air fry for 6 minutes, toss and continue air frying for 5-6 more minutes or until the chicken has reached an internal temperature of 165℉.
When finished, divide the chicken and vegetables between plates and serve over rice or as is!
Notes
Before serving, drizzle some fresh lemon juice or sprinkle lemon zest over the chicken and vegetables. This adds a zesty and citrusy element that complements the Cajun flavors.
