Preheat the air fryer to 400℉ and lightly spritz the basket with olive oil spray.
Add the cubed chicken thighs to a medium sized mixing bowl and toss with olive oil. Then add the salt, pepper, minced garlic, lemon zest, onion powder, garlic powder, and paprika. Toss again to fully coat the chicken in the seasonings.
Skewer the seasoned chicken and place the skewers in a single layer inside the air fryer basket. Air fry the chicken skewers for 12 minutes, flip and air fry for 10 more minutes, or until the internal temperature of the chicken has reached 175℉

Meanwhile, prepare the lemon butter sauce. In a small mixing bowl, add the softened butter, salt, pepper, garlic powder, onion powder, paprika, sugar, and lemon juice. It should be a thick and creamy consistency. If it appears runny, mix in another tablespoon or two of softened butter.
When the chicken is finished cooking, remove the skewers from the air fryer and transfer them to a serving plate. Brush all sides with the lemon butter sauce, garnish with fresh chopped parsley and serve.

Soak your skewers: If using wooden skewers, soak them in water for at least 20–30 minutes before air frying to prevent burning.
Cut evenly: Try to cut the chicken into evenly sized pieces so they cook uniformly.
Don’t overcrowd: Leave a little space between each piece of chicken on the skewer and make sure the skewers aren’t packed too tightly in the air fryer basket. This helps with even crisping and airflow.
Marinate for more flavor: While the recipe is delicious as-is, you can marinate the chicken for 30 minutes to a few hours in your favorite sauce or seasoning blend to boost flavor even more.
