Preheat the air fryer to 390° F. Whisk the eggs in a small mixing bowl. In another mixing bowl, combing the flour, Panko, baking soda, garlic powder, paprika, and cayenne pepper.
2 large eggs, 1/2 cup all-purpose flour, 1/2 cup panko breadcrumbs, 1/2 tsp baking soda, 1 tbsp garlic powder, 1/2 tbsp paprika, 1/2 tbsp cayenne pepper
Dip the pickles in the flour mixture to coat both sides, then in the egg, and then back in the flour.

Place the pickles in a single layer in the air fryer basket and spritz with olive oil. Air fry the pickles for 10 minutes flip and cook for an additional 5-6 minutes until they are crispy and golden brown. Sprinkle the air fried pickles with flaky salt if using and serve with ranch dressing for dipping.
Give the pickles room: Make sure you don't have overlapping or touching between the pickles. This makes it so they all cook evenly and don't get soggy.
Cook in batches: If you can't fit all the pickles in a single layer, cook them in multiple batches. You can pop the cooked pickles in a low temperature oven on a baking sheet covered in aluminum foil to keep them crispy and hot while the rest air fry.
