Cut the potato lengthwise into 1/4 inch thin slices; then cut each slice into 1/4 inch fries. (A mandoline is helpful here).
Soak the potatoes in water for 1-2 hours to remove some of the starch and make them extra crispy.
About 5 minutes before you're ready to make the french fries, preheat the air fryer to 400 F.
Drain the water from the bowl and toss the potatoes with olive oil, salt, pepper, garlic powder, parmesan cheese, and paprika. Place the potatoes in the air fryer basket in a single layer without overlapping (you may need to work in batches). Air fry for 15-20 minutes, tossing the potatoes halfway through.
When finished, you can top the fries with extra parmesan cheese, a sprinkle of garlic powder, and fresh parsley or eat them as is!
