Slice the avocados in half and chop the onion, jalapeño, cilantro, and tomato.
3 ripe avocados, 1 to tomato,, 1/4 cup red onion,
Using a spoon, separate the avocado flesh from the skin. Place avocados into a Molcajete and mash. Add the tomatoes, onion, cilantro and jalapeño. Mix until combined, but do not over mix.

Mix in the lime juice and half the zest. Add the salt and pepper and take a taste. Add more if needed.

Serve immediately with tortilla chips and store leftovers tightly covered in plastic wrap in the fridge.
