Roasted Balsamic Strawberries are made with sweet strawberries, tangy aged balsamic vinegar, and honey that pairs perfectly with whipped feta for a delicious appetizer. This easy recipe will quickly become your game day or date night starter go-to.
Preheat oven to 400F and arrange the frozen strawberries in a single layer of a 9X13 baking dish.
In a small mixing bowl, whisk the balsamic vinegar and honey together. Pour the mixture over the berries and toss to coat. Drizzle the mixture over the strawberries and toss until combined. Roast the strawberries for 35-45 minutes, tossing them occasionally, or until they have softened and released their juices. When the strawberries are done roasting, remove them from the oven and allow to cool for 5-10 minutes. Transfer them to a container with their juices and chill in the fridge. The liquid will thicken as they chill.
Whipped Feta
In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt, lemon juice, salt and pepper. Blend on high, and while the processor is running, drizzle olive oil through the top opening, and continue blending until the feta is whipped to a smooth mixture.
Refrigerate the feta for 5-10 minutes before spreading on your toasted bread. Then top with the balsamic roasted strawberries, fresh basil, and flaky salt.

This recipe can be made with fresh strawberries too. You'll want to roast them at 350 F instead of 400. Sometimes I like to slice them in half before roasting.
Any extra whipped feta can be stored in the refrigerator for 4-5 days.
