Place the potatoes on a baking sheet and toss with the olive oil until they are evenly coated. Then season with salt and pepper. Arrange the potatoes in an even layer on the baking sheet and roast for 20-25 minutes or until they are fork-tender and start to brown.
2 medium sweet potatoes, 1 tablespoon olive oil, ½ teaspoon kosher salt, ½ teaspoon black pepper
While the potatoes are roasting, heat a large skillet over medium-high heat. Once hot, add the ground beef and brown for 2-3 minutes on each side. Then use a meat masher or spatula to break the meat apart. Season with paprika, garlic powder, onion powder, salt, and pepper, continuing to cook for about 5-6 minutes or until it’s thoroughly cooked through and no longer pink. Remove the pan from the heat and set aside.
