Cook the pasta according to package directions. Reserve ¼ cup of the starchy pasta water, drain, transfer the pasta to a sheet pan to cool and toss with 2 tbsps of olive oil.
Meanwhile, heat the oil in a heavy bottomed skillet (a cast iron is great!) over medium-high heat. Once hot, add the ground beef and brown for 4-5 minutes on each side before breaking the meat apart with a spatula or meat masher.
Continue cooking the beef for 5-6 minutes or until it is no longer pink. Add the salt, pepper, and red pepper flakes, then mix to combine. Then add shredded cheese and cook, stirring to combine, until the cheese has melted and the beef is fully cooked (160F). Remove the pan from the heat and let it cool to room temp.
Add the pasta and cooked ground beef to a large mixing bowl with the burger sauce and mix to combine. Then mix in the pickles, tomatoes, shredded lettuce, and red onion.
