Crispy, caramelized sweet potatoes tossed in a honey butter glaze with paprika, garlic, and a little lemon. An easy side dish for Thanksgiving or a busy weeknight, ready in 40 minutes!
Add the butter and olive oil to a small saucepan over medium-low heat until the butter has melted. Add the lemon juice, lemon zest, and honey. Simmer for one minute on low heat.

Pour the honey butter mixture over the sweet potatoes, tossing well to make sure the sweet potatoes are evenly coated.
Transfer sweet potatoes, leaving behind any excess butter and oil, onto the baking sheet in a flat layer, making sure to leave some space in between each cube, and roast for 20-25 minutes, tossing them after about 15 minutes. When finished, the edges should be crisp and the potatoes should be fork tender.
Pour any remaining honey butter over top of the potatoes and sprinkle with flaky salt just before serving.

Hot honey: Swap in hot honey if you like a little heat!
Save some honey butter: Want extra for drizzling? Set aside about 2 tablespoons of the honey butter before you toss the potatoes.
Storage: Let the sweet potatoes cool to room temperature before transferring them to an airtight container and storing in the refrigerator for up to 5 days. Reheat in the oven or the air fryer to re-crisp the edges. The microwave will make them soft.
