Notes
Pound thick or uneven breasts to an even thickness before marinating so they cook at the same rate.
Doneness: Check the thickest part with an instant-read thermometer. It should read 165°F.
Too much char: Move the chicken to indirect heat to finish cooking.
Sticking: Fully preheat the grill, clean and oil the grates, and leave the chicken alone for a few minutes before flipping.
Grill pan: Heat a cast-iron grill pan over medium-high for about 5 minutes, then lightly oil it. Cook the chicken 5 to 7 minutes per side, until the thickest part reads 165°F. Turn on the vent fan, since it can get smoky.
Chicken thighs: Boneless, skinless thighs can be swapped in. Grill them 5 to 7 minutes per side, until the thickest part reads at least 165°F.
