Flaky puff pastry squares topped with creamy Brie, caramelized onion jam, crisp bacon, and a drizzle of honey. These bite-sized appetizers bake until golden and bubbly and make the perfect effortless holiday or party snack.
In a small bowl, combine the onion jam with the balsamic, ground nutmeg, and black pepper.
½ cup onion jam, 1/2 teaspoon balsamic vinegar, ¼ tsp ground nutmeg, 1/4 tsp black pepper
Cut the puff pastry into 9 even squares, then trace a square in the center of each puff pastry square, about a half inch from the edge, without cutting all the way through. This is just to help the edges puff up while keeping the center flat.

Spread the caramelized onion jam mixture evenly inside the border. Add the sliced brie on top and sprinkle with bacon. Lightly brush the border with the egg wash.

Bake for 20–25 minutes on a parchment paper lined baking sheet, or until the puff pastry is golden and the Brie is melted and bubbly.
Drizzle lightly with honey, then finish with fresh thyme and flaky salt.

Don’t skip the border step: Scoring that square in the center helps the edges rise while keeping the middle flat so your toppings stay put.
Watch for even browning: Every oven runs differently — start checking around 18 minutes. They’re done when the edges are golden and crisp. Turn the baking sheet around if the back is browning faster.
