Preheat the air fryer to 400° F. Using a silicone pastry brush, brush a thin layer of olive oil all over the potatoes. Sprinkle with kosher salt.
Air fry the potatoes for 30-35 minutes, or until you can easily poke a fork into the center. During the last 3 minutes of cooking, add the broccolini florets to the air fryer basket. (It's ok if they overlap, they will still cook just fine!) When finished, remove the broccolini and let the potatoes sit in the warm air fryer basket with the air fryer turned off for 2-3 minutes. This will help soften the crispy skin so you don't break it when cutting open the potatoes. Don't worry, it will crisp back up when you air fry them again!
Dice the broccolini into small pieces, then carefully slice the potatoes in half lengthwise and scoop out the inside using a spoon (be careful not to tear the skin). *Do not discard the hollowed out potatoes*
Place the insides of the potatoes into a large mixing bowl with the Greek yogurt, butter, dill, garlic powder, and black pepper. Mash the potatoes using an electric mixer until smooth and creamy.
Fold in half the cheese and diced broccolini with a spoon or spatula. Spoon the mashed potatoes into the hollow shells. Top with remaining broccolini and cheese. Air fry at 375° for 5 minutes, or until cheese is melted and begins to turn golden brown.
Notes
If you're making more than the air fryer can hold at one time, place the cooked twice baked potatoes on a baking sheet in the oven at 200 F to keep them warm.
