Green Beans Almondine

Ingredients

  • 1/3 cup slivered almonds
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 small red onion, finely sliced
  • 1 lb green beans, fine and trimmed
  • 1/2 tsp flaky salt
  • 1/3 tsp ground black pepper
  • 1 tbsp lemon juice
  • 1 lemon, zest
  • 1/4 tsp red pepper flakes

Instructions

  • In a small skillet over low to medium heat, toast the almonds, stirring occasionally, until golden, about 5 minutes. Set the toasted almonds aside to cool.
  • Heat the oil in the same skillet over medium heat. Add the red onion and sauté for 3 minutes or until softened. Then add the garlic and continue cooking for about 1 minute, until the garlic is fragrant.
  • Add the green beans, salt, and pepper. Sauté for about 5 minutes until al-dente. Mix in the lemon juice and top with toasted almonds, lemon zest,and red pepper or chili flakes. Transfer the green beans to a serving bowl and serve warm.
