Simple and healthy, Green Beans Almondine is a French veggie side dish that features gorgeous green beans and crunchy almonds. Made in just 20 minutes, this easy recipe is the perfect companion to a holiday roasted herb butter turkey or busy weeknight dinner!
In a small skillet over low to medium heat, toast the almonds, stirring occasionally, until golden, about 5 minutes. Set the toasted almonds aside to cool.
Heat the oil in the same skillet over medium heat. Add the red onion and sauté for 3 minutes or until softened. Then add the garlic and continue cooking for about 1 minute, until the garlic is fragrant.
Add the green beans, salt, and pepper. Sauté for about 5 minutes until al-dente. Mix in the lemon juice and top with toasted almonds, lemon zest,and red pepper or chili flakes. Transfer the green beans to a serving bowl and serve warm.
Notes
I recommend using thin green beans because they cook quickly in a saucepan and have a comforting texture.
If you need to prepare the beans ahead of time and want to preserve their color and texture, blanching them in cold water or an ice bath can help preserve them longer.
To store, keep leftover green beans in an airtight container in the fridge for 3 to 4 days. Reheat them in the microwave, oven, or toss them in a hot pan over the stove top until heated through. You can also freeze your green beans for up to 3 months. Allow them to thaw in the fridge before reheating.
