Combine mayonnaise with mint, dill, and lemon juice in a small bowl, then spoon a generous amount over each salmon filet. Top each filet with a heaping portion of chopped pistachios. I like to put the salmon in the air fryer before dressing it with the mayo mixture to save on cleanup and so I don't have to worry about messing it up when trying to put it in the basket.
1/4 cup light mayonnaise, 4 fresh mint leaves,, 1.5 tablespoons fresh dill,, 3/4 cup pistachios,, 2 tablespoons lemon juice,
Lightly spray the salmon with olive oil and air fry the filets for 6-8 minutes. If you're using a larger piece of salmon, air fry it for additional time in 1 minute increments. Remember, air fryers cook things quickly!
Using a small spatula, carefully remove the salmon from the air fryer and plate. Garnish with fresh dill if desired.

*If using an oven, preheat to 425ºF and bake for 10-12 minutes, depending on the thickness of the salmon.
