Heat a medium sized non-stick pan with 1 tbsp

on medium-high heat.
Butter the outside of each slice of bread. Spread the
pesto
on the inside of each slice. Spread
avocado
over the pesto and top with
mozzarella cheese.
Carefully place the
sandwiches
on the pan and cook for 2 minutes or until golden brown, repeat on the other side.
