Preheat the oven to 425F and lightly grease a sheet pan with olive oil. In the meantime, combine the Greek yogurt, crunchy chili onion, and lime zest.
Place the chicken and red onion on the sheet pan and bake for 20 minutes.
Remove the sheet pan from the oven and set the broiler on high. Meanwhile, add the corn to the pan and remove the onions if they are cooked to your liking. Return the sheet pan to the oven, a few inches from the broiler and broil for 2-3 minutes to crisp the tops of the chicken and cook the corn.
Remove the sheet pan from the oven and squeeze lime juice over the corn and chicken. Top with the crunchy chili onion sauce, crumbled cotija cheese and cilantro.
