It’s no secret that I’m a huge fan of Trader Joe’s. They have some amazing and unique ingredients that can be used as shortcuts for meals that will put your favorite restaurants to shame!

This sheet pan meal takes advantage of their flavorful and tender shawarma chicken thighs, frozen fire roasted corn, and chili onion sauce for a flavorful and satisfying sheet pan dinner. It doesn’t get any easier than this!

Ingredients for Trader Joe’s Chicken Thighs

  • Shawarma chicken thighs: These perfectly seasoned boneless chicken thighs are great as a starting point for a quick dinner that’s loaded with flavor.
  • Fire roasted corn: Another TJ’s find, this corn adds a nice amount of subtle sweetness and charred, smoky flavor.
  • Chili onion sauce: This sweet and spicy sauce includes dried garlic and dried onion for the perfect amount of savory crunch and delicious heat!

How to Make Chicken Thighs

Step 1. Bake chicken. Place the chicken and red onion on a baking sheet lined with parchment paper and bake for 20 minutes.

Step 2. Make sauce. Meanwhile in a separate small bowl, combine the Greek yogurt, crunchy onion chili sauce, and lime zest.

Step 3. Remove onion. To prevent it from burning, remove the onion from the baking sheet and transfer it to a plate.

Step 4. Broil. Add the corn to the baking sheet around the chicken thighs and broil on high for 2 to 3 minutes, or until everything is hot and charred to your liking. Squeeze fresh lime juice over the chicken and corn, add the sauce, and top with cotija crumbles and fresh cilantro.

Recipe Tips and Variations

  • Extra Veggies: For some added nutrition, include chunks of veggies like bell peppers, zucchini, brussels sprouts, eggplant, or something heartier like carrots, sweet potatoes, beets, or turnips.
  • Make it a Bowl Dinner: For a fun serving alternative, shred the chicken thighs and serve everything over Ginger Rice. You can also use the chicken and corn as a filling for wraps with some lettuce and tomato and load them up with the homemade chili sauce!
  • BBQ Style: Brush unseasoned chicken thighs with your favorite BBQ sauce before baking and once more before broiling.

Storage and Reheating

Allow the leftovers to cool to room temperature, then transfer to an airtight container. Your leftovers should last in the fridge for 3 to 4 days, and can be frozen for several months. The leftovers keep pretty well, so this is also a great recipe for meal prep.

Reheat in the oven at 350 degrees F until the chicken thighs are heated through. To prevent the chicken from drying out, cover it with aluminum foil. From frozen, allow your leftovers to thaw in the fridge for a bit before reheating for best results.

Ingredients

  • 1/2 cup greek yogurt, (or mayo)
  • 2 tbsp crunchy chili onion sauce
  • 1 lime, zest and juice
  • 1 package Trader Joe's shawarma chicken thighs
  • 1 bag fire roasted corn
  • 1 red onion, (or 3 shallots)
  • Cotija cheese, crumbled
  • 2 tbsp fresh chopped cilantro

Instructions

  • Preheat the oven to 425F and lightly grease a sheet pan with olive oil. In the meantime, combine the Greek yogurt, crunchy chili onion, and lime zest.
  • Place the chicken and red onion on the sheet pan and bake for 20 minutes.
  • Remove the sheet pan from the oven and set the broiler on high. Meanwhile, add the corn to the pan and remove the onions if they are cooked to your liking. Return the sheet pan to the oven, a few inches from the broiler and broil for 2-3 minutes to crisp the tops of the chicken and cook the corn.
  • Remove the sheet pan from the oven and squeeze lime juice over the corn and chicken. Top with the crunchy chili onion sauce, crumbled cotija cheese and cilantro.
