Heat a skillet over medium-high heat with a drizzle of olive oil. Add the ground chicken to the skillet and cook for 2-3 minutes on each side before breaking it up with a meat masher. Once the chicken is about 80% cooked through, add the oregano, garlic powder, cumin, paprika, salt, pepper, and parsley. Stir to combine, then add the spinach. Cover the pan and cook for an additional 2 minutes, allowing the spinach to soften and the chicken to finish cooking. Uncover and set aside once the chicken is fully cooked and the spinach has wilted.
In each bowl, layer the cooked rice, baby spinach and chicken mixture, and sliced cucumbers. Top with crumbled feta cheese, pickled onions, cucumbers, tzatziki, and dill.
