Ingredients You Will Need

Chicken Thighs: Boneless skinless chicken thighs are perfect for this recipe and cook to perfection in the air fryer.
Seasonings: For the marinade, you’ll want to add seasonings like cumin, paprika, oregano, garlic, red pepper flakes, salt and black pepper.
Substitutions/Additions
- Fresh ingredients like the garlic and lemon juice can be substituted for bottled or jarred versions to streamline prep. There’s no shame in keeping a jar of lazy girl garlic in your fridge!
- Instead of chicken thighs, you can also use chicken breasts. They cook slightly faster so be sure not to overdo them.
- For serving, I like to top my chicken with some taztziki, feta cheese, fresh parsley, pickled onion, and another squeeze of fresh lemon juice.
How to Make Air Fryer Chicken Skewers

Step 1. Make marinade. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, black pepper, and crushed red pepper flakes.

Step 2. Marinate chicken. Toss the chunks of chicken thighs in the marinade, ensuring everything is evenly coated. Marinate at least 30 minutes or up to 4 hours.

Step 3. Add to skewers. While the chicken marinates, soak the skewers in water to prevent burning in the air fryer. Then thread the marinated chicken onto the skewers.

Step 4. Air fry. Arrange in a single layer in the air fryer, avoiding overlap. Cook at 400 degrees for about 12 minutes, then flip and cook another 10 minutes or so.

Yes, it’s safe to cook raw chicken in an air fryer as long as you cook it to its minimum safe internal temperature of 165 degrees!
Absolutely! Bell peppers, red onions, zucchini, and cherry tomatoes pair well and cook in about the same time.
Serve with pita bread, tzatziki, Greek salad, lemon rice, or even over a Mediterranean quinoa bowl.
Storing and Reheating Chicken Skewers
If you have leftovers, allow the chicken to cool and remove from the skewers. Transfer to an airtight container and keep in the fridge for 3 to 4 days or in the freezer for a couple of months. Tip: I like to remove the chicken from the skewers for storing.
To reheat them, toss the chicken back in the air fryer at 350 and cook until heated through again. You can add it to skewers if you like, but it’s not necessary. From frozen, let the chicken thaw in the fridge before reheating.

Instructions
- In a large bowl, combine the olive oil, lemon juice, garlic, cumin, paprika, salt, black pepper, and crushed red pepper flakes (if using). Whisk to create the marinade. Add the chicken thigh pieces to the bowl and toss to coat thoroughly. - While the chicken marinates, soak the wooden skewers in water for 20-30 to prevent burning, or use metal skewers.
- Preheat the air fryer to 400F. Thread the marinated chicken onto the skewers then place them in the air fryer basket in a single layer, ensuring they don’t overlap. You may need to cook them in batches depending on how big your air fryer is.
- Air fry for 12 minutes, flip and air fry for 10 more minutes, or until the chicken reaches an internal temperature of 165°F and is golden brown on the edges.

Notes
- I like my chicken super crispy, so I’ll cook them an extra 3-5 min (it’s not easy to dry out chicken thighs in an air fryer, so don’t worry about overcooking them!)
- For serving, I also really like Crazy Feta for extra flavor!
- For a veggie side, I like to toss some cubed zucchini in the leftover marinade and either sauté it in a pan, bake it in the oven, or air fry it.
