7-Day Dinner Plan (Week 11)

After spending the last few weeks glued to The White Lotus, I’ve been craving bold, flavor-packed meals that feel like a trip without the plane ticket. At least these recipes won’t leave me hanging like the finale did (I’m not over it yet 😩). This week’s meals are inspired by my go-to pantry staples lately, like coconut milk, lime, curry paste, and fish sauce.

If you're substituting coconut cream for full-fat coconut milk, try using about half coconut cream and half water to achieve a similar consistency to full-fat coconut milk.

Take the night off! Dine out or order in.

Tips of the week

🍚 Two of this week’s meals use rice, and a rice cooker takes out the guesswork and the mess. It frees up your stovetop, keeps rice warm until dinner, and this one’s under $20!

🐟 The secret ingredient this week is fish sauce! A tiny splash (just 1/2 tsp!) adds rich, savory depth to stir-fries, sauces, and dressings—and it’ll last you forever!

🫚 Swap fresh ginger for Trader Joe’s frozen ginger cubes or ginger paste (1.5 tbsp of fresh ginger is about 2.5 inches of ginger root).
