A handful of ingredients are used to add layers of flavor to the sauce which can make the ingredient list seem long. As soon as you get your ingredients prepped you’ll be happily surprised at how quickly this recipe comes together.

Pairing this curry recipe with shrimp will also help cut your cook time! For this recipe, I tossed my shrimp straight into the air fryer with just a little olive oil and seasoning.

You can really make your Air Fryer Shrimp a meal in so many ways. I used bell peppers to add a crunchy veggie, but you can definitely replace or add just about any vegetable to this dish. Curries tend to be very forgiving so you can play around and find your preferred taste.

Although this ingredients list seems a bit long, don’t be afraid. Once you’re ingredients are prepped and ready, this recipe will be done in a snap!

Cilantro lime rice

  • jasmine rice
  • cilantro
  • lime juice and zest

Air fryer shrimp

  • shrimp
  • olive oil
  • bell peppers
  • blacken seasoning

Coconut curry sauce

  • coconut milk
  • cornstarch
  • coconut oil
  • garlic cloves
  • ginger
  • red curry paste
  • fish sauce
  • chili powder
  • ground cloves
  • lime juice and zest

How to Make Air Fryer Shrimp And Peppers

I like to get the rice started first so it can cook while I prepare everything else. Next, I’ll prepare the shrimp and while the shrimp and rice are cooking, I’ll get started on the coconut curry sauce.

To make the rice, just cook it according to the package instructions. Then mix in the cilantro, salt, lime juice and zest.

How to cook shrimp in the air fryer

1. Preheat your fryer. Preheat your air fryer to 375 degrees.

2. Season the shrimp. Season your shrimp and peppers with the blackened seasoning and set aside.

3. Cook the shrimp. Place your seasoned shrimp and peppers in the preheated air fryer basket and air fry for 12-15 minutes.

How to Make Coconut Curry Sauce

1. Make a cornstarch slurry. Whisk together coconut milk and cornstarch in a mixing bowl and set aside.

2. Sauté the garlic and ginger. Heat your coconut oil in a medium-sized saucepan over medium heat. Add your garlic and ginger, cook until fragrant about 1-2 minutes.

3. Make the sauce. Whisk in curry paste until well combined, cook for about 1 minute. Gradually whisk in coconut milk mixture, whisking constantly until slightly thickened 1-2 minutes. Whisk in lime juice, fish sauce, chili powder, ground cloves, and salt.

4. Reduce heat and simmer. Reduce the heat to medium-low and simmer for 5-10 minutes.

5. Serve and enjoy! Divide the rice, shrimp, and peppers between two bowls. Spoon coconut curry sauce over the top and garnish with fresh cilantro.How to cook shrimp in the air fryer

What kind of shrimp to use in the air fryer

Any raw shrimp will be fine to cook in your air fryer. However, you should keep in mind that cook times may vary depending on size. Most medium-size shrimp will need about 3-5 minutes while jumbo shrimp might need about 10-12 minutes.

How to devein shrimp

The easiest way to devein shrimp is when after they’ve thawed. You can easily devein your shrimp by using a sharp knife to make a slit along the back of the shrimp.

You should be able to easily pull the vein out with your fingers or the tip of the knife while rinsing under cold water.

Can you put frozen shrimp in an air fryer?

Although I prefer not to, yes, you can definitely put frozen shrimp in an air fryer. It’s just not quite as easy to season them before cooking if you air fry frozen shrimp.

You can throw your shrimp frozen solid into your air fryer and get perfectly plump fully cooked shrimp!

How do you know if shrimp is undercooked?

Undercooked shrimp is usually pretty easy to spot. Cooked shrimp should be pink and opaque, it should also curl into a tight “C” shape when fully cooked. Their internal temperature will be 145 F when fully cooked.

How to reheat this recipe

You can easily pack up leftovers for lunch or dinner the next day and reheat for 1-2 minutes in the microwave. You can store the rice, shrimp, peppers, and sauce together in a glass storage container with a tight fitting lid in the refrigerator for 2-3 days.

Ingredients

Cilantro Lime Rice

  • 1/4 cup jasmine rice
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 teaspoon kosher salt
  • 1/2 lime, juice and zest

Air Fryer Shrimp

  • 10 jumbo shrimp, U-12/15 peeled and deveined
  • 1 tablespoon olive oil
  • 1-2 tablespoons blacken seasoning
  • 2 bell peppers, thinly sliced
  • 1 small white onion, thinly sliced

Coconut Curry Sauce

Instructions

Cilantro Lime Rice

  • Cook the rice according to package instructions. When fully cooked, mix in the cilantro, salt, lime juice, and zest.

Air Fryer Shrimp

  • Add the shrimp, olive oil, and blacken seasoning, bell peppers, and white onion to a mixing bowl and toss to combine.
  • Preheat the air fryer to 375° F. Place the seasoned shrimp and peppers in the air fryer basket and air fry for 12-15 minutes, until shrimp are fully cooked and peppers start to char.

Coconut Curry Sauce

  • In a mixing bowl, whisk together the coconut milk and cornstarch. Set aside.
  • Heat the coconut oil in a medium-sized saucepan set over medium heat. Add the garlic and ginger to the skillet, and cook, stirring frequently, until fragrant, about 1-2 minutes. 
  • Whisk in the curry paste until well combined and cook for 1 minute. Gradually whisk in coconut milk mixture, and cook, whisking constantly, until incorporated and slightly thickened, about 1-2 minutes. Whisk in the lime juice, fish sauce, chili powder, ground cloves, and salt. Reduce the heat to medium-low and simmer for 5-10 minutes.
  • To serve, divide the rice, shrimp, and peppers between bowls. Spoon the coconut curry sauce over top and garnish with fresh cilantro.

    This was very good! Also my first attempt making my own curry dish. I donโ€™t care for cilantro so I left it out, but followed everything else to the letter. Next time I may either cut down the blacken seasoning or cut down on the chili powder – one of those was a little off-putting, but just my preference. Excellent recipe, thank you so much!

    Amazing!!! It was so good I actually ate way too much… I will be more careful with the leftovers. I adjusted the proportions of the rice, and I didn’t use as much cornstarch because I don’t like my curry super thick. I worked with the spices that I had and I only had penang curry. This is truly SO delicious and dynamic. I will be air frying my shrimp more often from now on!
