This recipe for filet mignon mimics my favorite steakhouse meal but is made with minimal cooking time in the air fryer! It’s also topped with a delicious Blue Cheese Butter.

Best Filet Mignon Recipe Ingredients

  • Filet mignon: This particular cut of beef is taken from the smaller end of the tenderloin and is the most lean and tender.
  • Montreal seasoning – This is the simplest way to give your steak a lot of flavor and a nice crust on the outside.
  • Blue cheese butter – This is optional, but for best results I suggest you don’t skip it! It’s made with blue cheese, butter, parsley, and garlic. A homemade compound butter is the quickest way to level up an already perfect steak!

Substitutions

  • Homemade Seasoning: If you want to make your own, you can combine black pepper, garlic powder, salt, paprika, onion powder, ground coriander, dill weed, and crushed red pepper flakes.
  • Garlic Herb Butter: Would be a delicious alternative to blue cheese butter.

How To Cook Filet Mignon in the air fryer

Step 1: Marinate. Pat the steaks dry and generously season. Marinate in olive oil until they come to room temperature. Meanwhile, prepare the blue cheese butter.

Step 2: Air Fry. Place the steaks in the air fryer basket in a single layer and cook for 10 minutes, flipping halfway through, until the internal temperature has reached 130F.

Step 3: Rest. Transfer the steaks to a plate and top with butter. Cover the plate with foil and let it rest for 2 minutes.ย

Step 4: Serve. Enjoy your steaks with your favorite sides, like Slow Cooker Mashed Potatoes and Green Beans Almondine.

Recipe Tips

  • Don’t skip out on marinating your steak before cooking. This will ensure they cook evenly and also produces juicier, more tender meat. You can cover them with plastic wrap if you need to.
  • When preparing the butter, I like to divide the mixture into ice cube molds and freeze them the night before, then place them on the counter to thaw while I cook the steaks.
  • Steaks should be about 135ยฐ F for medium-rare, which is what this recipe calls for. Cook your steak longer if you prefer it more well done.

How to Pick the Best Filet Mignon

  1. Choose a reputable source: shop at a trusted butcher, specialty meat shop, or high-quality grocery store known for premium cuts.
  2. Look for marbling: select a filet mignon with fine marbling (small streaks of fat within the meat). This adds flavor and keeps the steak tender.
  3. Thickness of the steak: choose a steak that is at least 1.5 to 2 inches thick. Thicker cuts are easier to cook evenly and stay juicier. A nice thick steak looks great when served too!
  4. Consider the grade: look for USDA Prime or Choice cuts for the best quality. Prime has the highest level of marbling and tenderness, while Choice is also high-quality but slightly less marbled.

Filet mignon is a steak cut of beef from the smaller end of the tenderloin. Did you know that in French this cut can also be called filet de boeuf? Filet mignon can also refer to pork tenderloin in French!

What is the difference between beef tenderloin and filet mignon?


Beef tenderloin is the whole piece of meat, while filet mignon is the portion that tapers down at the end of the tenderloin. Filet mignon is pieces cut into rounds from the tenderloin.

How long should filet mignon be cooked?

For a perfect medium-rare, cook your steak for about 9 minutes total. It really depends on your preference of doneness though. I always recommend checking for doneness with a meat thermometer, as cook times can vary based on the appliance.

Rare 120-130 F
Medium rare 130-135 F
Medium 135-145 F
Medium well 145-155 F
For food and safety reasons, the FDA recommends cooking steaks for 145 F.

Ingredients

Filet Mignon

Blue Cheese Butter

  • 1/4 cup unsalted butter, softened
  • 1/4 cup blue cheese, crumbled
  • 1 tablespoon fresh chopped parsley
  • 1 garlic clove, minced

Instructions

  • Pat the steaks dry with paper towels and generously season both sides with Montreal seasoning. Place the steaks in a shallow dish with olive oil. Allow them to marinate while they come to room temperature (about 10 minutes). This will ensure they cook evenly and also produces juicier meat.
    4 (6 oz) Aspen Ridge filet mignon, 2 tablespoons Montreal seasoning, 1/4 cup olive oil
  • While the steaks are marinating, combine the butter, blue cheese, parsley, and garlic in a small bowl. Place in the refrigerator for later. I like to divide the mixture into ice cube molds and freeze them the night before, then place them on the counter to thaw while I cook the steaks.

  • Preheat the air fryer to 450ยฐ F. Place the steaks in the air fryer basket and cook for 6 minutes, flip, and cook for an additional 4 minutes. Steaks should be about 135ยฐ F for medium-rare.Transfer the steaks to a foil covered plate to rest for 2 minutes. I like to place the blue cheese butter over the steaks to melt while they are hot and resting.

    Cooked to perfection. Used fresh Rosemary, Basil, and Garlic for the Compound Butter. Turned out fantastic! Cooked at 400 degrees for 12min.(flip halfway through). Huge hit with the family!

    This was AWESOME … a total keeper! My beef wasn’t as thick as pictured, so I cut off 2 mins in the air fryer and it was a perfect medium-rare. Super tender, juicy and flavorful! Had some leftover sauce – heated it up the next day added a bit of cream and it was even better.

  3. I have not been able to locate an Air Fryer that goes to 450 degrees.

    1. Hey Mike – the Ninja Foodi Grill goes up to 450, but you can also do it at 400 and cook for about 2-3 minutes longer. Make sure you are reading the internal temperature with a meat thermometer as well.

    1. Hi! I would still cook it according to the recipe, then check the internal temperature with a meat thermometer and continue cooking at 1-2 minute increments to your desired doneness.

        the only thing I struggled with is my powerxl air fryer only goes up to 400ยฐ other than that this was amazing. I love when I find recipes that use the same ingredients and same techniques I use. it’s almost a weird self serving thing that let’s me know I got it still lol
