Viral Feta Fried Egg

I’m late to every trend and viral recipe, and in true “me” fashion was very late to this one. But now it’s my favorite way to eat a fried egg and definitely the BEST thing you can do with leftover feta cheese.

You know how when you make a recipe, there’s almost always an awkward amount of feta left where you either have to throw it away because there’s not enough to use it in another recipe or risk having too much feta (not that that’s really a thing) in whatever you’re making?

Well save that little bit of feta cheese and make eggs the next day! You’ll be so happy you did.

Honestly, I prefer cotija cheese for this recipe but if you’ve got leftover feta, use it!

Ingredients

  • 1 tsp olive oil
  • 1/4 cup crumbled feta or cotija cheese
  • 2 tbsp frozen roasted corn
  • 1 egg
  • optional toppings: pickled onions, cilantro, avocado

Instructions

  • Heat the olive oil in a non-stick skillet over medium heat. Then add the crumbled feta cheese or cotija, let it sit for 1-2 minutes until it starts to soften.
  • Add the frozen corn to the pan on top of the crumbled feta. Make a hole in the center and crack the egg into the pan. Cover with a tight fitting lid and cook for about 2 minutes, then continue cooking uncovered for another 2-3 minutes or until the white part of the egg has set.
  • Using a spatula, remove the egg from the pan and transfer it to a plate. I like to serve mine on toasted sourdough with mashed avocado, pickled onions, and cilntro.

    Absolutely unreal! Tastes just as good as it looks :). Been looking to spice up my breakfast options and add nutrients other than plain eggs every day. This is exactly what I was looking for!

    Came here after trying the Veggie Breakfast Pizza. This one is just 6 minutes to make and it’s sooo good. I made mine with cotija and added pickled onions and avocado on top ๐Ÿ™‚ Highly recommend
