  • Steak: Sirloin and ribeye are usually my picks for this recipe, but you can also go for something like flank steak or skirt steak if you want a slightly less pricey option. Those thinner cuts will cook faster, so keep an eye on it!
  • Potatoes: I like to use baby yellow potatoes for a smooth and buttery interior with that nice crispy air fried exterior.
  • Seasonings: Aside from garlic, you’ll just need salt and pepper and some fresh rosemary and thyme.

How to Make Air Fryer Steak and Potatoes

  1. Make oil mixture: In a small bowl, stir together the olive oil, minced garlic, rosemary, thyme, kosher salt, and black pepper until well combined. This simple garlic herb oil is what flavors both the steak and the potatoes.

  1. Season the steak and potatoes: Add the baby yellow potatoes to a mixing bowl and toss with half of the oil mixture until evenly coated. Set aside so they’re ready to go into the air fryer first. Add the cubed steak to a separate bowl and toss with the remaining oil mixture, making sure each piece is well coated for maximum flavor and browning.

  1. Air fry: Place the potatoes in the air fryer basket in an even layer. Cook at 400°F for 8 minutes to give them a head start so they get tender and lightly crispy. Then add the steak bites on top of the potatoes, and continue cooking until the steak is cooked to your liking and the potatoes are golden and tender. For medium-rare steak, aim for an internal temperature of about 130°F.

  1. Garnish and serve: Divide the steak and potatoes between plates and finish with fresh parsley and flaky salt. Serve immediately while everything is hot and crispy.

Yes, you can cook raw steak in the air fryer for a quick, easy method that yields a tender result with a nice crust on the outside.

How can I tell when steak is fully cooked?

If you’re worried about the steak not being quite done, use a meat thermometer to check for an internal temp of at least 165 degrees (or your preferred temperature). Luckily, steak bites aren’t super thick, so you won’t really have to worry about them being raw in the middle.

How to store air fryer steak bites?

If you have leftovers, transfer them to an airtight container and store in the fridge for around 3 days or in the freezer for a couple of months.

What’s the best way to reheat air fryer steak bites?

You can microwave your air fryer steak bites if you need them hot again in a pinch, but I recommend popping them back in the air fryer at 350. If you’re reheating frozen leftovers, let them thaw in the fridge first.

  • 1/4 cup olive oil
  • 3 garlic cloves minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 tablespoon black pepper
  • 1 pound steak sirloin or ribeye, cut into 1 inch pieces
  • 1/2 pound baby yellow potatoes halved or quartered into 1 inch pieces
  • 1 tablespoon fresh parsley finely chopped

Instructions

  • In a small mixing bowl, combine the olive oil with garlic, rosemary, thyme, salt and pepper.

  • Place the potatoes to the air fryer basket in an even layer and air fry at 400F for 8 minutes. Then add the steak bites to the air fryer basket with the potatoes. Cook for an additional 5 minutes or until steak is cooked to your liking (at least 130F).

  • When finished, divide the steak and potatoes between two plates and garnish with fresh parsley and flaky sea salt before serving.
