  • Trim the bottom end off the Brussels sprouts and slice them in half lengthwise. If you’re working with extra large ones, quarter them. Rinse and soak the Brussels sprouts in cold water for 10 minutes. This will help the sprouts taste more tender in the center. Make sure you drain and pat them dry with a clean kitchen towel or paper towel.
    1.5 lb brussels sprouts
  • Preheat the air fryer to 400F. In the meantime, toss the Brussels sprouts with olive oil, half the salt, garlic powder, and 1 tbsp of maple syrup in a large mixing bowl. Add the seasoned Brussels sprouts to the fryer basket in an even layer, it’s ok if there is some overlap. Air fry for 10 minutes, tossing halfway through.
    2.5 tbsp olive oil, 1/2 tsp kosher salt, 1/2 tsp garlic powder, 2.5 tbsp maple syrup
  • In a separate small bowl, combine the remaining maple syrup with the lemon juice and remaining salt. Transfer the Brussels sprouts to a serving bowl and toss with the maple lemon mixture. Then top the Brussels sprouts with crumbled goat cheese and serve.
