Air Fryer Philly Cheesesteak Egg Rolls
Crispy Philly Cheesesteak Egg Rolls stuffed with melty cheese and seasoned beef—like your favorite sandwich, but air fried and crispy, and ready in 30 minutes! Serve them with a roasted garlic aioli and watch them disappear!

When my buffalo chicken egg rolls went viral during football season, everyone asked me to make a Philly cheesesteak egg roll version. So here they are!

Ingredients You’ll Need

- Ground beef – Subs in for the classic steak strips in the iconic sandwich.
- Peppers and onions – Diced veggies that channel the classic cheesesteak toppings!
- Worcestershire sauce – Deepen that savory, umami flavor and make these air fryer egg rolls irresistible.
- Shredded cheese – Provolone is the authentic cheese for Philly cheesesteaks, but some may argue that is cheese wiz!
- Egg roll wrappers – You should be able to find these at most grocery stores in the refrigerated section near the produce.
- Mayonnaise – Every good aioli starts with mayo as the base. This is my favorite brand.
- Garlic – A whole bulb of fresh garlic is crucial to get that genuine roasted garlic flavor in the aioli.

Substitutions/Additions
- Steak swaps: You can also use shaved ribeye in this recipe.
- Cheese choices: Provolone is classic, but you can swap in mozzarella, velveeta, cheddar, or even American cheese for a melty finish.
- Add veggies: Sautéed mushrooms or jalapeños make a flavorful upgrade; or toss in spinach for a bit of green.
- For a slightly lighter take, use ground turkey or ground chicken instead of beef.
- If you need to, you can use wonton wrappers instead of egg roll wrappers, but they’re a bit smaller.
- Cut down on prep time by using garlic powder instead of roasted garlic for the aioli…but trust me, the roasted garlic is SO worth it.
How to Make Philly Cheesesteak Egg Rolls

Step 1: Brown beef. Cook the beef in a cast iron skillet, using a masher to break it up as it cooks.

Step 2: Add the veggies. Stir in the minced peppers and onions and cook for 4 to 5 minutes until the veggies are soft and the beef is fully cooked.

Step 3: Assemble. Place a spoonful of the filling in the center of the egg roll wrapper and roll tightly.

Step 4: Air fry. Air fry at 375 degrees for 6 to 7 minutes. Flip and cook another 4 to 5 minutes. (See below for step by step instructions on how to fold an egg roll.)
How to Fold Egg Rolls
Folding egg rolls is easier than it looks! Follow these step-by-step photos:
- Place the filling near one corner of the wrapper.
- Roll it up once, tucking the filling tightly.
- Fold in the sides like an envelope.
- Roll again, sealing the edge with egg wash.
Make sure the seam side is down before frying to keep them perfectly sealed and crispy.




Storing and reheating
Allow the egg rolls to cool off, then transfer to an airtight container and store in the fridge for 3 to 4 days or in the freezer for up to 2 months.
To reheat, pop them back in the air fryer or in the oven. You might want to spritz them with additional olive oil so they crisp up again. These egg rolls can even be cooked right from frozen, though they’ll need a few extra minutes of cooking time.

Air Fryer Philly Cheesesteak Egg Rolls
Ingredients
- 1 lb ground beef
- 1 whole medium white onion finely diced
- 1 whole green bell pepper optional, finely diced
- ¼ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 1 tbsp Worcestershire sauce
- 1 cup shredded provolone cheese
- 1 package egg roll wrappers
- 1 whole egg beaten
- 1 tsp Olive oil spray
Garlic Aioli
- 1 whole garlic bulb
- 1 tablespoon olive oil
- 1 1/4 cup mayonnaise
- 1 tablespoon lemon juice freshly squeezed
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Heat a heavy bottomed pan (like a cast iron) over medium-high heat. Add the ground beef to the pan and let it sit, undisturbed, for about 3-4 minutes to brown. Once browned, use a meat masher to break up the beef into smaller pieces. I like to do this while the garlic is roasting.1 lb ground beef
- Add the finely diced onion and bell pepper to the pan with the beef. Cook, stirring occasionally, for another 4-5 minutes until the vegetables soften and the beef is fully cooked.1 whole medium white onion, 1 whole green bell pepper
- Stir in the salt, pepper, garlic powder, and Worcestershire sauce. Reduce the heat to low and mix in the shredded provolone cheese. Once it’s melted, remove the pan from the heat and allow it to cool slightly.¼ tsp kosher salt, ¼ tsp black pepper, ½ tsp garlic powder, 1 tbsp Worcestershire sauce, 1 cup shredded provolone cheese
- Preheat the air fryer to 375F while you prepare the egg rolls. Place 1-2 tbsps of the steak and cheese mixture into the middle of an egg roll wrapper, about ¾ of the way down. Carefully fold up the bottom corner.Using your finger, dab the edges of the wrapper with the egg, then fold in the sides like an envelope. Continue rolling tightly toward the top corner and then seal the edge with a small dab of water. Repeat with the remaining wrappers and filling.1 package egg roll wrappers, 1 whole egg
- Lightly spritz olive oil on both sides of the egg rolls. Place the egg rolls in the air fryer basket, seem side down and cook 6-7 minutes. Flip and cook 4-5 minutes or until golden brown.If working in batches, place the cooked egg rolls in the oven at 200°F to keep them warm.1 tsp Olive oil spray
Garlic Aioli
- Preheat the oven to 400°F. Cut the top off of the garlic bulb about 1/2 inch down, so the top of each clove is exposed. Place the bulb in a piece of aluminum foil and drizzle olive oil on top.Wrap the foil around the bulb and bake for 25-35 minutes, until cloves are tender, caramelized, and easy to squeeze (exact timing will depend on the size of your bulb).1 whole garlic bulb, 1 tablespoon olive oil
- Meanwhile, in a small bowl combine the mayonnaise, lemon juice, salt, and pepper. Set aside.1 1/4 cup mayonnaise, 1 tablespoon lemon juice, ¼ teaspoon kosher salt, ¼ teaspoon black pepper
- Let the garlic bulb cool for a few minutes before turning the bulb upside down and squeezing out the garlic cloves. Add the roasted garlic to the mayo mixture and smash with a fork while mixing. Stir the garlic and mayonnaise mixture until completely incorporated. Taste and add more salt if needed.
- Place the cheesesteak egg rolls on a serving platter with the garlic aioli and enjoy!

Notes
- If you haven’t rolled an egg roll before, the first few may feel challenging but you will get the hang of it after you roll about 3 of them! Just make sure they are nice and tight.
- You can prepare the filling ahead of time and store it in the fridge overnight, but it’s easier to fill the egg rolls when the filling is warm!
- For smoother garlic aioli use a mini food processor.
- You can prepare the aioli up to 2 days ahead of time. If you want to cut down on cook time, you can use garlic powder instead of roasted garlic, but trust me – the roasted garlic is SO worth it.

Aside from my incredible homemade garlic aioli, a chipotle ranch or a cheese sauce would be incredible. You could also pair your egg rolls with marinara, honey mustard, ketchup, or whatever sauces you like to serve with appetizers.
Yes! You can prepare both the aioli and the filling a day or two ahead of time and store in the fridge, though the egg rolls will be easier to wrap up when the filling is hot.
