Similar to my Mediterranean Chicken Thighs and Mediterranean Pasta Salad, this recipe takes classic and refreshing Mediterranean flavors and turns them into a quick and easy bowl recipe.

Ingredients You’ll Need

  • Jasmine rice – A great hearty base for any chicken and rice bowl.
  • Ground chicken – A lean and versatile protein that easily absorbs flavors, making it perfect for creating these flavorful bowls.
  • Seasonings – To channel that Greek flavor, I use a blend of oregano, parsley, cumin, paprika, salt and black pepper.
  • Baby Spinach – For some added nutrition and color.

Substitutions/Additions

  • Feel free to swap the jasmine rice for any type of rice, like brown rice, or even serve the dish over roasted sweet potatoes for a flavorful twist.
  • For a different protein option, try ground turkey or ground beef for a heartier alternative.
  • You can also get creative with toppings – microgreens, olives, and sun-dried tomatoes all make excellent additions to elevate the dish.

How to Make a Chicken and Rice Bowl

Step 1: Cook rice. Cook your rice according to package directions.

Step 2: Brown ground chicken. In a skillet, heat oil over medium high heat. Add ground chicken and cook 2 to 3 minutes on each side before breaking up.

Step 3: Add spinach. Add seasonings to the chicken and mix well. Once browned, add spinach and cook until wilted.

Step 4: Assemble. Add rice to your bowl and top with your chicken mixture, followed by all the toppings you like!

  • 3/4 cup thinly sliced cucumbers
  • 3/4 cup crumbled feta cheese
  • pickled onions
  • ½ cup tzatziki
  • 2 tablespoons fresh chopped dil

Instructions

  • Cook the rice according to package instructions.
    1 cup jasmine rice
  • Heat a skillet over medium-high heat with a drizzle of olive oil. Add the ground chicken to the skillet and cook for 2-3 minutes on each side before breaking it up with a meat masher. Once the chicken is about 80% cooked through, add the oregano, garlic powder, cumin, paprika, salt, pepper, and parsley. Stir to combine, then add the spinach. Cover the pan and cook for an additional 2 minutes, allowing the spinach to soften and the chicken to finish cooking. Uncover and set aside once the chicken is fully cooked and the spinach has wilted.
    1 tablespoon olive oil, 1 lb ground chicken, 1 tsp dried oregano, 1 tablespoon dried parsley, 1 tsp garlic powder, 1/2 tsp ground cumin, 1/2 tsp paprika, 1/4 tsp salt, 1/4 tsp black pepper, 2 cups baby spinach
  • In each bowl, layer the cooked rice, baby spinach and chicken mixture, and sliced cucumbers. Top with crumbled feta cheese, pickled onions, cucumbers, tzatziki, and dill.

Notes

  • You can add a drizzle of olive oil to the chicken and spinach if you’d like.
