Great for a Sunday dinner or holiday meal, this Air Fryer Brisket is an easy recipe that’s sure to turn out perfect every time! The air fryer ensures your beef is thoroughly cooked but still tender and moist.

Making a brisket can be daunting at times. You want to make sure this classic dish is cooked all the way through, but if you cook this cut of beef for too long it can dry out or come out too tough.

That’s why I love this air fryer brisket! I’ve found that it’s easier and more reliable than cooking brisket the traditional way, and it’s so fast with such simple steps. It can even be made for a hearty weeknight dinner paired with your favorite side dishes.

  • Seasonings and herbs – A robust blend of herbs and spices is what gives this beef recipe its fantastic flavor. I use a mixture of garlic powder, onion powder, smoked paprika, flaky sea salt, black pepper, rosemary, thyme, oregano, and sage.
  • Brisket – Make sure to balance a large enough brisket to feed the intended crowd with a small enough brisket to fit inside your air fryer! I used about 2.5 pounds, which served about 6 people.
  • Mustard – For an added savory bite. Dijon mustard or whole grain mustard are typically the best options here.

How to Make Air Fryer Brisket

Step 1: Make the brisket rub. Combine the spices and herbs in a bowl.

Step 2: Season the brisket. Coat string-wrapped brisket with olive oil, then mustard, and add homemade rub all over the brisket.

Step 3: Air fry the brisket. Transfer the brisket to your air fryer basket and cook at 365 degrees F for around 35 minutes.

Step 4: Serve. Transfer the cooked brisket to a cutting board and allow it to rest for 10 minutes, then remove the string and slice with an electric carving knife into thin slices.

Recipe FAQs

How long to heat brisket in air fryer?

Start at about half an hour to 35 minutes. Cook times can differ depending on the size and power of your air fryer, as well as the size of your brisket. Be sure to check for internal temperature if you’re not confident the brisket is done cooking.

Can you smoke meat in air fryer?

No, the way air fryers work is by using a fan to quickly distribute hot air around the chamber, like a convection oven. There isn’t really a safe way to add smoke to the equation!

Do you have to flip meat in the air fryer?

You don’t have to touch the brisket once you’ve started the air fryer! Because of the way air fryers circulate air, there’s no flipping or turning necessary.

At what temp does brisket get tender?

Anywhere from 195 to 205 degrees F is what you should aim for. The exact temperature can be different depending on the size and quality of the brisket, and of course your personal preference.

How to store brisket?

Transfer the cooled brisket to an airtight container or wrap tightly in plastic wrap or aluminum foil, then store in the fridge for a few days. If you need to keep the brisket around for longer, it can also be frozen for 2 to 3 months or so.

How to reheat brisket?

You can reheat your leftover brisket in the air fryer or on a baking sheet in the oven. I recommend adding some kind of fat or liquid to prevent drying out—a little bit of butter is a great option. Heat at 350 degrees F or so, and ensure the brisket’s internal temp gets back up to at least 140 degrees F.

  • Preheat the air fryer to 365 F.
  • In a small bowl, combine the garlic powder, onion powder, paprika, salt, pepper, rosemary, thyme, oregano, and sage. Place the beef brisket in a tray and rub with 1 tbsp of olive oil and mustard.

  • Sprinkle the seasoning all over and drizzle with the remaining 1 tbsp of olive oil. Gently press the rub in with your hands.

  • Transfer the brisket into the air fryer basket (I line mine with parchment paper for easier clean up) and cook for 35 minutes for medium – slightly pink in the middle. Cooking times will vary slightly depending on the thickness and weight of your brisket.

  • Transfer the brisket to a cutting board and allow it to rest for 10 minutes. Remove the string and slice thinly with an electric carving knife. Serve with roasted carrots or mashed potatoes and enjoy!

Notes

  • The best internal temperature will vary based on your preference, but for best results I recommend aiming for somewhere around the 195 F range when air frying.
  • Use a digital meat thermometer to start checking around 180 F. You want it to still be slightly pink in the middle, and also keep in mind that it will continue to cook a bit as it rests.
