When the oven is already occupied (helloooo Thanksgiving…I’m looking at you!), these are great to crisp up in the air fryer. A simple combo of common spices and parsley team up with rich butter to create a perfect side dish to please any crowd.

Ingredients You Will Need

Mini potatoes: Also called baby potatoes, these miniature potatoes are the perfect size for air fryer cooking. You can also use Russet potatoes, red potatoes, or any kind of larger potatoes as long as you cut them into smaller pieces, but this recipe works best on mini potatoes.

Spices: For my potatoes, I just add some paprika, salt and black pepper. You can add more flavor with onion powder, cumin, lemon pepper, Italian seasoning, or red pepper flakes.

Butter: Start with unsalted butter so you can adjust the salt level to taste. Olive oil and avocado oil will make these potatoes a little more calorie friendly, but I like the rich flavor butter brings.

Parsley: Fresh parsley will give the most fresh and vibrant flavor, but you can use dried parsley as well if you need to.

Garlic: I also prefer mincing fresh garlic cloves, but using jarred garlic or even garlic paste or garlic powder can be a good shortcut.

How To Make These Air Fryer Parmesan Potatoes

Step 1: Chop the potatoes: Cut the baby potatoes in half.

Step 2: Score the potatoes: Use a sharp knife to score the potatoes (this will allow the butter and spices to seep in for more flavor distribution!)

Step 3: Add to air fryer: Pour the melted butter into the bottom of the air fryer basket and mix in the paprika, garlic, salt, and pepper. Add the potatoes cut side down in a single layer, use a brush to distribute the butter, then sprinkle with cheese and air fry at 390 F for 20 minutes.

Step 4: Flip the potatoes: Turn the potatoes over and add more Parmesan cheese and half the fresh chopped parsley. Air fry for an additional 10 minutes or until golden brown.

Storing and reheating

If you have leftover potatoes, allow them to cool to room temperature before storing them to prevent excess moisture. I recommend keeping them in an airtight container fridge. They’ll last 4 to 5 days in the fridge.

Reheat your Parmesan potatoes in the air fryer at about 350 degrees until they’re heated through and crispy again.

  • 15 mini potatoes halved
  • 8 tbsp unsalted butter melted
  • 1/2 cup grated parmesan cheese for topping
  • 2 tsp paprika
  • 4 cloves garlic finely minced
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chopped parsley

Instructions

  • Remove the slotted air fryer basket, leaving the bottom tray in place, and preheat the air fryer to 390F.
  • Score the inside of the potatoes with a pairing knife. Add the melted butter to the base of the air fryer with 4 tbsp of parmesan cheese, paprika, garlic, salt, and pepper.
    15 mini potatoes, 8 tbsp unsalted butter, 1/2 cup grated parmesan cheese for topping, 2 tsp paprika, 4 cloves garlic, 1/4 tsp kosher salt, 1/4 tsp black pepper
  • Place the potatoes, cut side down in the air fryer basket and use a silicone brush to coat the tops with the melted butter mixture. Sprinkle 2-3 tbsp of parmesan cheese on top and air fry for 20 minutes.
  • Flip the potatoes over, top with the remaining parmesan and half the fresh parsley. Continue air frying for 10 more minutes. Garnish with more fresh parsley and serve.

Notes

  • Have extra cheese? Sprinkle a little more Parmesan on while the potatoes are hot for a melty finish.
  • Cook in a single layer for even browning. Work in batches if needed.
  • For extra crispy potatoes, soak the cut potatoes in cold water for 20-30 minutes to remove excess starch, then dry thoroughly before seasoning.
  • You can leave the skin on the potatoes (I think it makes them even more crispy and delicious)!
