  • All-purpose seasoning: You can use any favorite seasoning. I like this one.
  • Fresh mint: Adds a light, fresh flavor that brightens the salmon without overpowering it.
  • Fresh dill: Classic with salmon, dill brings a mild, herby taste that pairs perfectly with lemon.
  • Pistachios: Finely chopped for the best texture; they create a crunchy, nutty crust that sticks well to the fish.
  • Light mayonnaise: If you’ve never tried this before, you may think it sounds weird but a thin layer keeps the salmon moist while it cooks.
  • Lemon juice: Freshly squeezed adds brightness and balances the richness of the salmon and mayo.

How to make salmon in the air fryer

  1. Season the salmon: Preheat the air fryer to 400ºF and spray the air fryer basket with olive oil. Season the salmon filets with your favorite all purpose seasoning or salt and pepper to taste.

  1. Add the topping: Spoon the mayonnaise mixture over the tops of the salmon. Top each filet with a heaping amount of chopped pistachios.

  1. Air fry salmon: Lightly spray the salmon with olive oil and air fry for 6-8 minutes or until the salmon flakes easily with a fork. If you’re using a larger piece of salmon, continue cooking the salmon in 1 minute increments until cooked to your liking.

Recipe FAQs

Do I need to remove the salmon skin?

No, you don’t have to remove the skin. Keeping the skin on helps protect the salmon while it cooks, adds flavor, and makes it easier to handle in the air fryer. Just place the salmon skin-side down so it gets crisp on the bottom while the pistachio crust stays golden on top. If you prefer skinless salmon, you can remove it before cooking—the recipe will still work. You can also slide a spatula between the skin and the salmon to remove it after cooking.

Can I bake pistachio crusted salmon instead of air frying?

Yes, you can bake it! Place the salmon filets on a foil-lined baking sheet and cook for 12-15 minutes at 400F, or until the salmon is cooked to your liking.

How do I know when the salmon is done?

Salmon is fully cooked when it flakes easily with a fork and reaches an internal temperature of 145°F. The pistachio crust should be lightly golden and crisp.

  • Preheat air fryer to 400ºF and spray the basket with olive oil.

  • Season the salmon with all purpose seasoning.
    5 salmon filets,, 1 tablespoon all-purpose seasoning
  • Combine mayonnaise with mint, dill, and lemon juice in a small bowl, then spoon a generous amount over each salmon filet. Top each filet with a heaping portion of chopped pistachios. I like to put the salmon in the air fryer before dressing it with the mayo mixture to save on cleanup and so I don't have to worry about messing it up when trying to put it in the basket.
    1/4 cup light mayonnaise, 4 fresh mint leaves,, 1.5 tablespoons fresh dill,, 3/4 cup pistachios,, 2 tablespoons lemon juice,
  • Lightly spray the salmon with olive oil and air fry the filets for 6-8 minutes. If you're using a larger piece of salmon, air fry it for additional time in 1 minute increments. Remember, air fryers cook things quickly!
  • Using a small spatula, carefully remove the salmon from the air fryer and plate. Garnish with fresh dill if desired.

  3. Can this be used with other fish, like Cat fish Sole, Flounder or Wall eye?

    1. I haven’t tried it with those, but I don’t see why not! You’ll just want to adjust the cook time based on the fish.

  4. DO NOT USE SPRAY OLIVE OIL OR ANY OTHER SPRAY OILS as mentioned above. It will damage the non stick coating of the basket. Otherwise cook away!!!

      1. All olive oil eats the Teflon. Spray or not. If it’s non stick, trust it to not stick.
