Buffalo Chicken Salad Recipe
We’ve all heard the saying…”No great story ever started with someone eating a salad.” Today is the day we change that!
This salad is exciting, fresh, and something to look forward to for lunch or dinner.
So, what is buffalo chicken salad? Aside from incredible, it’s the perfect salad packed with veggies, fresh flavors, the best textures, and all served up with a delicious kick from tender and crispy buffalo chicken.
Buffalo Chicken Salad Ingredients
Salad Ingredients
Lettuce: I used Fresh Express Sweet Butter Lettuce.
Vegetables and herbs: I used NatureSweet Cherubs Tomatoes because they have a meatier inside and are less watery, so when you slice them open they won’t water down your salad with their excess juices.
You will also need purple cabbage, shredded carrots, avocado, red onion, and fresh cilantro.
Dairy and dressing: Blue cheese crumbles and Litehouse Chunky Blue Cheese Dressing. This dressing can also double as a dip for fresh cut veggies!
Buffalo Chicken Ingredients
Meat and poultry: chicken tenders and eggs. These baked chicken strips would work great!
Dry ingredients: all-purpose flour, cornstarch, and baking soda.
Herbs & spices: salt, black pepper, onion powder, garlic powder, and paprika.
Wet ingredients: olive oil for frying, honey, butter, and buffalo sauce (or hot sauce).

How to make Buffalo Chicken Salad
1. Prepare the salad. In a large serving bowl, mix the lettuce, tomatoes, purple cabbage, carrots, red onion, cilantro, and half the blue cheese crumbles. Cover and refrigerate while you prepare the chicken.
2. Prepare the chicken. Whisk the egg in a small shallow bowl and in another shallow bowl, add the flour, cornstarch, salt, pepper, onion powder garlic powder, and paprika.
3. Dip the chicken. Dip the chicken tenders in the flour mixture, then in the egg, and then once again in the flour.
4. Cook the chicken. Heat a large skillet (I like to use my dutch oven to keep the oil from splattering) over medium-high heat.
Once sizzling hot, place the chicken tenders in the pan for about 3 minutes on each side or until golden brown. Use rubber tipped tongs to carefully turn the chicken so you don’t lose the breading. Place the chicken on a paper towel lined plate to cool.
5. Prepare the buffalo sauce. While the chicken cools, whisk together the buffalo sauce, melted butter, and honey. Dip each piece of chicken in the sauce to coat and cut into 1 inch pieces. Drizzle any leftover sauce over top of the chicken.
6. Toss the salad. Toss the salad with the dressing, place chicken, avocado, and remaining blue cheese crumbles over top. Drizzle with remaining honey buffalo sauce and dressing if desired. I always do!

Why is it called buffalo chicken?
Did you know that buffalo chicken has nothing to do with buffalo or bison? “Buffalo Chicken” actually comes from and family-owned restaurant in Buffalo, New York. It was the first place this tasty chicken was served and the name stuck!

Ingredients
- 3 cups Fresh Express Sweet Butter Lettuce
- 1 cup NatureSweet tomatoes, halved
- 1/2 cup shredded purple cabbage
- 3/4 cup shredded carrots
- 1 large avocado, cubed
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh cilantro, chopped
- 1/2 cup blue cheese crumbles
- 1/4 cup Litehouse Chunky Blue Cheese Dressing
Buffalo Chicken
- 1 pound chicken tenders
- 2 large eggs
- 3/4 cup all purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking soda
