Growing up, my mom had 4-5 meals on constant rotation for busy weeknights, and these salmon cakes were a crucial part of that rotation! She didn’t make them every week, so they were special and more of a treat when she did.
If you’re a fan of crab cakes, this salmon patty recipe is sure to be a hit! These are so easy to make and include healthy veggies like red pepper and celery in addition to salmon, which is packed with those omega-3 fatty acids.

Baked Salmon Cakes Ingredients
- Fresh salmon: I prefer to use fresh fish, but in a pinch canned salmon will also get the job done.
- Shallot: Provide some onion-y flavor, but they’re a bit more subtle so they don’t take over.
- Eggs: Help the patties hold their shape as they bake.
- Veggies: I like to add red bell pepper and celery for extra flavor and nutrition. Feel free to switch up the veggies to your liking!
- Panko bread crumbs: Panko breadcrumbs are my preference since they’re nice and crispy and will give your salmon patties a fantastic bite. Another potential option is to use cracker crumbs (saltine crackers and Ritz crackers both work well).
- Mustard: Add some Dijon for instant tangy flavor.
- Mayonnaise: For additional tanginess and a little bit of creamy consistency.
- Lemon juice: Fresh lemon juice pairs perfectly with the salmon and helps balance out the savory flavors. You could also add a bit of lemon zest if you want a more notable pop of citrus.
- Seasonings: I use a simple blend of salt, pepper, and fresh dill. Use fresh herbs for best results!
- Olive oil: You’ll just need a little bit of oil to cook the salmon.
How to make Baked Salmon Patties
- Cook the salmon. Preheat your oven to 350 degrees F, then brush the salmon with a little bit of oil and season with salt and black pepper. Bake for 10-12 minutes.
- Prepare salmon. Once the salmon finishes cooking, give it time to cool, then use a spatula to remove the skin. Place the salmon in a large bowl and use two forks to shred it.
- Make salmon mixture. To the shredded salmon, add the shallot, bell pepper, egg, celery, breadcrumbs, mustard, mayo, lemon juice, salt, pepper, and dill. Mix until well combined.
- Form patties. Use a 1/4 cup measure to scoop portions of the salmon mixture and form them into patties. Arrange on a baking sheet.

Cook at 400 degrees F for 10-12 minutes.
Tips for Making Salmon Cakes in Oven
- Salmon patties with canned salmon: To cut down on prep time, you can also prepare this recipe using canned salmon. Just mix it with all of the ingredients and form the patties, and you’ll be good to go!
- Air fryer salmon patties: You can also cook these salmon patties in the air fryer. Cook them at 400 degrees for 8 to 10 minutes and give them a flip halfway through for even cooking.
- Tuna patties: Instead of salmon, you could also make these patties using a can of tuna if you prefer the flavor.
- Line the baking sheet: If you want an easy clean up, when you bake the salmon patties you could also cover the baking sheet with parchment paper or aluminum foil.
- Don’t overcook: Keep in mind that the salmon is already cooked, so you’re just aiming to heat the patties all the way through and get a nice golden brown exterior.
- Add other mix-ins: Customize your tender salmon patties with Old Bay seasoning, green onions, Worcestershire sauce, green pepper, garlic powder, or smoked paprika are great options for extra flavor.
What to Serve with Oven Baked Salmon Patties
I highly recommend whipping up a batch of my lemon dill sauce to serve alongside with your salmon patties. It brings out the tangy and bright flavors and makes for the perfect pairing! Add lemon wedges on the side as well.
You can also pair your salmon patties with roasted potatoes, a classic chopped vegetable salad, or serve them as sliders or salmon burgers with a bit of hot sauce and some lettuce and tomato.
How to serve Baked Salmon Cakes
The easiest way to serve these is straight from the oven with a side salad or roasted potatoes. Don’t forget to top them with the Lemon Dill Sauce!
You can even use leftover salmon cakes to make a salmon patty sandwich with some lettuce and a tomato.

How to Store Salmon Patties with Fresh Salmon
Leftover salmon patties can be secured in plastic wrap or stored in an airtight container the the fridge for 3 to 4 days. You can also freeze them in freezer bags for up to 3 months. You may want to use a little piece of parchment or wax paper to separate the patties in the freezer to prevent them from sticking together.
How to reheat Baked Salmon Patties
Place salmon patties back in the oven or air fryer at 350 degrees for about 5 minutes, then check the temperature and add time as needed. I recommend allowing them to thaw in the fridge before reheating from frozen, but you can also pop them right into the oven and add a few minutes to account for the temp difference.
Salmon Cakes in Oven FAQs
In order to keep your patties from falling apart, I recommend allowing them to sit in the fridge for a bit after you’ve formed them. There isn’t a whole lot of filler in this baked salmon recipe, so 30 minutes in the refrigerator can help them keep their shape.
This is likely due to undercooking, or adding too much oil while cooking. You need just the slightest drizzle to prevent the patties from sticking to the baking sheet. If you add too much oil, the patties may absorb it and become mushy.
If the patties are either too wet or too dry, this can cause them to fall apart or not hold their shape properly. Add more bread crumbs if the patties seem too moist, or a bit more mustard and/or mayo if they’re too dry.

Salmon Patties in Oven
Ingredients
- 1.5 lbs fresh salmon
- salt and pepper
- 1 shallot, minced
- 1 red pepper, diced
- 2 eggs, beaten
- 1/3 cup celery, diced
- 1/2 cup panko bread crumbs
- 1.5 tbsp dijon mustard
- 2 tbsp mayonnaise
- 1/2 lemon, juice
- 2 tbsp fresh dill, minced
- Lemon Dill Sauce, for serving
Instructions
- Preheat the oven to 400 F and season the salmon with salt and pepper.
- Place the salmon on a baking sheet and bake for 10-12 minutes or until the internal temperature reaches 135 F. (It should be ever so slightly undercooked) When the salmon is finished, remove it from the oven and allow it to cool. Remove the skin by sliding a spatula between the flesh and the skin. Place the salmon in a large mixing bowl and shred with two forks.
- Add the shallot, red pepper, egg, celery, breadcrumbs, dijon mustard, mayonnaise, lemon juice, dill, salt, and pepper to the bowl with the salmon. Mix until all ingredients are combined.
- To make the salmon cakes, set the broiler to high and move the rack 4 inches below the broiler. Form 1/4 cup of the mixture into patties on a greased baking sheet and broil for 6-10 minutes. The edges should begin to char when finished.
- Serve with Lemon Dill Sauce and more fresh dill.
