Roasted Balsamic Strawberries are made with sweet strawberries, tangy aged balsamic vinegar, and honey that pairs perfectly with whipped feta for a delicious appetizer. This easy recipe will quickly become your game day or date night starter go-to.

Balsamic Roasted Strawberries Recipe
This is a great recipe to make for a party; however, I recommend making the strawberries a few hours in advance so that the flavors can really mesh together.
I love using the balsamic roasted strawberries as a topping for my breakfast foods! Using the strawberry mixture as a pancake or waffle topping is a great substitute for using butter and syrup.
You can also spread whipped feta cheese and roasted strawberries on top of toasted sourdough for a delicious quick breakfast.

Roasted Strawberries
Balsamic Vinegar: the vinegar has a rich, tangy, and sweet flavor that pairs well with strawberries. The balsamic helps break down the strawberries while adding an incredible honey-like flavor.
Honey: adds additional sweetness to your strawberries while roasting. I like to use local honey, but you can use any kind that you have. If you don’t like honey, you can use maple syrup as a substitute.
Frozen strawberries: I like to use whole frozen strawberries because they seem to roast the best. If you’re using large fresh strawberries, just roast them at a lower temperature and check on them a little sooner because they won’t take as long to roast.
Sourdough: this is my favorite bread for serving feta dip with roasted strawberries because it’s a great serving vessel, but you can use any type of fresh crusty bread, like a baguette.
Fresh basil: diced basil adds a spicy yet sweet flavor to your roasted strawberries and feta. It also helps to enhance the natural sweetness of the strawberries and complements the tanginess of the balsamic vinegar.
Whipped Feta Ingredients
Feta cheese: the cheese has a tangy and sharp taste which makes it the perfect base for this dip mixture. It can also complement the sweet and acidic flavors of balsamic roasted strawberries.
Its creamy texture and slightly pungent flavor can help balance out the acidity of the strawberries and balsamic vinegar.
Greek yogurt: we use yogurt in the whipped feta mixture to add creaminess and tanginess to the dip. The yogurt helps to thin out the feta cheese and create a smooth and spreadable texture. It also adds a tangy flavor that complements the saltiness of the feta.
Lemon juice: the whipped feta dip needs an acid for balance and it also helps with preserving the feta dip.
How to Make Balsamic Roasted Strawberries
Balsamic Roasted Strawberries
1. Preheat the oven to 400 F and arrange the frozen strawberries in a single layer of a 9X13 baking dish.
2. Combine honey and balsamic. In a small bowl, whisk the balsamic vinegar and honey together. Pour the mixture over the berries and toss to coat.
Drizzle the mixture over the strawberries and toss until combined. Roast the strawberries, tossing them occasionally, or until they have softened and released their juices.
3. Chill the strawberries. When the strawberries are done roasting, remove them from the oven and allow them to cool before transferring them to a container with their juices and allowing them to chill in the fridge. Note: the liquid will thicken as they chill.
Tip: try adding a tsp of honey for a touch of sweetness!
How to make Whipped Feta
- Prepare the whipped feta. In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt, lemon juice, salt and pepper. Blend on high, and while the processor is running, drizzle olive oil through the top opening, and continue blending until the feta is whipped to a smooth mixture.
- Assemble the toasts. Refrigerate the feta for 5-10 minutes before spreading on your toasted bread. Then top with the balsamic roasted strawberries, fresh basil, and flaky salt.
Cooking Tips:
- This recipe can be made with fresh strawberries too. You’ll want to roast them at 350 F instead of 400. Sometimes I like to slice them in half before roasting them.
- Any extra whipped feta can be stored in the refrigerator for 4-5 days.
โโDoes roasting strawberries make them sweeter?
Absolutely! The flavors in the strawberries concentrate when roasting and become more intense. This really helps when you want to make balsamic roasted strawberries when the berries are out-of-season and aren’t as sweet.
How to Use the Roast Balsamic Strawberries
- Balsamic-Roasted Strawberries are a great topping for vanilla ice cream, pound cake, or French toast.
- You can also use roasted strawberries instead of jelly on a PB&J sandwich.
- Try adding in a few different spices, like pepper, cardamom, ginger, or cinnamon to create a whole new flavor.
What should I do with leftovers?
Balsamic Strawberries are best used before the three day mark. Be sure to keep them in the fridge in an airtight container.
They will also last in the freezer for up to four months, so they’re a great recipe to make in advance. I also recommend storing the feta separately in the fridge (I don’t recommend freezing whipped feta) from the strawberries, if possible. This will keep everything nice and fresh.

- 2 tbsps balsamic vinegar
- 2 tsps honey
- 2 lbs whole frozen strawberries*
- 6 pieces of sourdough, toasted
- 3 tbsps fresh basil, diced
- flaky salt
Whipped Feta
- 8 oz feta cheese
- 1/4 cup Greek yogurt
- 1/2 lemon, juice
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsps extra virgin olive oil
Instructions
Balsamic Roasted Strawberries
- Preheat oven to 400F and arrange the frozen strawberries in a single layer of a 9X13 baking dish.
- In a small mixing bowl, whisk the balsamic vinegar and honey together. Pour the mixture over the berries and toss to coat. Drizzle the mixture over the strawberries and toss until combined. Roast the strawberries for 35-45 minutes, tossing them occasionally, or until they have softened and released their juices.
