Chicken Parmesan Air Fryer Stuffed Mushrooms

Air Fryer Chicken Parmesan Stuffed Mushrooms are an entire meal stuffed inside one mushroom! They’re quick and easy, and the best for weeknight dinners.

Air Fryer Stuffed Mushrooms are a healthy, low-carb dinner made with a handful of fresh ingredients. They have all the best flavors of chicken parmesan, plus (my favorite) mushrooms!

Air Fryer Stuffed Mushrooms Recipe

Does anyone else struggle to find healthy meals they LOVE? I mean truly love. Like, want to make over and over type of love.

I feel that way with most healthy meals because nothing is ever as good as the real thing.

Ok, I shouldn’t say never, because that’s not true. There are some VERY good healthy recipes that I become OBSESSED with, like this Mushroom Bolognese. It’s seriously so good and I usually serve it over zoodles for a low carb dinner.

There was a point in time where I was meal prepping it for weekly lunches at least twice a month.

Recently I’ve been obsessing over these stuffed mushrooms. It’s an entire meal packed into one portobello mushroom cap! You’ve got your veggie (the mushroom), your protein (the chicken), and your dairy (the cheese) all in one!

And the toasted bread crumbs give them the best texture!

I love serving mine over a bed of couscous, but they’re so filling, you don’t even need a side dish!

Stuffed Portobello Mushroom Ingredients

Less than 10 ingredients come together to make up the best stuffed mushrooms ever. Here’s what you’ll need:

  • portobello mushroom caps
  • yellow onion
  • garlic
  • ground chicken
  • marinara sauce
  • shredded parmesan cheese
  • seasoned bread crumbs
  • shredded mozzarella cheese
  • fresh basil

Sometimes I like to substitute the bread crumbs for this gluten free panko I’ve been loving. If you use panko instead, just mix in 1 tablespoon of Italian seasoning.

Pro tip: add some lemon zest to the bread crumbs or panko to take the flavor up a notch!

How To Make Stuffed Mushrooms In The Air Fryer

1. Preheat the air fryer to 400ยฐ F and prepare the mushroom caps. While it’s heating up, gently scoop the gills out from the inside of the mushrooms with a spoon.

Spray or brush both sides of the mushroom caps with a thin layer of olive oil and cook for 6-8 minutes or until the mushroom has softened.

2. Cook the ground chicken. While the mushrooms are cooking, heat a large non-stick skillet on medium-high heat and sautรฉ the onion and garlic for 2-3 minutes, or until the onion begins to soften.

Add the ground chicken to the pan and season with salt and pepper. Cook for 5-6 minutes, or until the chicken is completely cooked through. Pour the marinara sauce in the pan, mix, and reduce the heat to low.

3. Prepare the bread crumb topping. While the chicken is cooking, mix the parmesan cheese and bread crumbs in a small bowl and set aside.

4. Drain and stuff the mushroom caps. When the mushrooms are finished, carefully remove them from the air fryer and drain the liquid (I do this in my sink). Place them back in the air fryer and stuff them with the chicken, then top them with mozzarella cheese.

Air fry at 375ยฐ F for 2-3 minutes, until cheese has melted. Then top them with the parmesan bread crumb mixture and cook for 1-2 more minutes, until the bread crumbs are toasted.

Can I make Stuffed Portobello Mushrooms In The Oven?

This Air Fryer Chicken Parmesan Stuffed Mushroom recipe can also be made in the oven. All the steps will be the same, except the mushrooms will cook at 400ยฐ F for 10-12 minutes in the oven until they begin to soften.

After you stuff them with the chicken mixture, return them to the oven and bake for 5 minutes.

Remove the mushrooms again and turn on the broiler. While it’s heating up, top the mushrooms with the bread crumb mixture and broil on the middle rack for 1-2 minutes or until the bread crumbs brown.

You can also make this recipe as an appetizer by using small portobello mushroom caps. They would make the perfect bite sized appetizer!

Notes

  • You can substitute the bread crumbs for panko, just mix in a teaspoon of Italian seasoning.
  • To make these in the oven:ย cook the mushrooms at 400ยฐ F for 10-12 minutes until they begin to soften. Stuff them with the chicken mixture and bake for 5 minutes. Remove them from the oven and turn on the broiler, top the mushrooms with the bread crumb mixture, and broil on the middle rack for 1-2 minutes or until the bread crumbs brown.
